Sunday chocolate cake

Sundays are about being lazy, relaxing, doing nothing and eating unhealthily. To complete your day I have whipped up a super easy chocolate cake! Can be made in the afternoon for afternoon tea or even for a sweet treat before bed! This cake is not about presentation or looking pretty but to taste yummy and put a smile on your face. Lets go..


140g plain flour
170g light brown sugar
6 Eggs
2 tbsp coco powder
1 tsp baking powder


Firstly you need to preheat your oven to 180 fan oven/160 gas or gas 4.
Line two baking tins or grease with butter.

For a simple cake all you need to do is whisk the eggs and sugar in a bowl until it doubles in volume and leaves a slight trail when you remove the whisk. It should take 5 minutes in a table top mixer, 10 with a hand whisk and you will have very tired arms if you chose to do it by hand!

The next step is also super easy, sift in the flour, coco powder and baking powder, fold in using a metal spoon, this needs to be done slowly or the air you have created will escape!

when you are happy that the mixture is completely combined separate into two sandwich tins and place into the oven for 15-20 minutes.

when the cake is cooked, take it out and leave to cool in the tin for 10 minutes, then take out of the tin onto a  cooling rack and leave for another 30 minutes.


Place in a bowl over a pan of boiling water 100g of dark chocolate and 60g butter and melt slowly until the mixture is glossy and runny. while this is melting take a spoon of chocolate spread and spread over on half of the cake pieces, then on the bottom of the other spread over white chocolate spread. Now sandwich them together using the spread as glue. 

The topping will now be melted enough so you can poor this on top of the cake *warning* it can get messy so do it on a plate as the chocolate will run down the sides!
